PHYTOCHEMICAL AND ORGANOLEPTIC CHARACTERISTIC OF Sterculia quadrifida R.Br. TREE BARK HERBAL TEA

Sterculia quadrifida R.Br. Bark decoction is used to treat hepatitis and consumed as a tonic by Timorese in the East Nusa Tenggara Province, Indonesia. Raw herbal materials are susceptible fungi contamination, have limitations transportation, low economic value. Processing bark into powder packed tea bags expected overcome these obstacles. Stevia, ginger, mint leaves herbs often added drink formulas. This study aimed evaluate antioxidant capacity, total flavonoid content (TFC), phenol (TPC), physicochemical properties, sensory properties of six formulas, namely: (F1) pure S. bark; (F2) stevia; (F3) stem ginger; (F4) quadrifida, stevia, (F5) leaves; (F6) mint. Total phenolic was measured using Folin-Ciocalteu method, flavonoids were determined AICI3 method. Antioxidant activity 2,2-diphenyl-1-picryl-hydrazyl-hydrate (DPPH) The TPC ranged from 14.09±0.7 68.20±0.95% Gallic Acid Equivalent (GAE), TFC 0.03±0.005 0.09±0.004% QE. Ascorbic acid Capacity (AEAC) F1, F2, F5, F6 insignificantly different. F1 contained highest levels antioxidants (1,044.3±28.48 ppm (AAE)). Formulas with addition mint, ginger showed weaker than quadrifida. F2 potential be developed commercial teas
